You too, can have “biscuits with the boss”! Coach Lasso’s biscuits (a.k.a. cookies) are easy to make with Shortbread Cookie Mix—you only need to add 2 ingredients! Not only are they soft n’ buttery; they’re gluten-free and nut-free, too. For the full Lasso effect, serve ‘em with hot, brown water (tea).
Topping (optional): granulated sugar
- Preheat oven to 350° F. Line an 8" X 8" baking dish with parchment paper with a 1" overhang on each side.
- Using a stand mixer (with paddle attachment) or hand mixer, on medium speed, beat mix with butter and water for 2–3 min or until a soft, uniform dough forms.
- Press dough into prepared dish. Place a piece of plastic wrap overtop; using your fingers or a small rolling pin, flatten and smooth top. It should be about 1⁄2" thick. Remove plastic wrap.
- Using a sharp knife, slice the dough into 18 rectangles. Using a fork or toothpick, dock shortbread (poke holes in it).
- Bake 55 min, or until top is golden brown and center is firm. Let cool in pan 5 min. While still hot, use a sharp knife to re-slice on lines as needed. Sprinkle with sugar, if desired.
- Cool completely. Lift out using parchment overhang.
Instead of plastic wrap to help smooth out your dough, use a 1⁄4 Sheet Pan Liner. It will prevent any sticking, and it can be reused!
