Mason jar® soups are like your meal prep BFF’s—they’re there when you need them. Prep a few of these bad boys at the beginning of the week for some grab ‘n go lunches, then just add water! Don’t be afraid to customize the protein and veggies based on what you have in your fridge. No matter what ingredients you’re choosing, our vegan Better Than Beef Broth will make sure your lunch is always delish.  


Ingredients

Toppings (optional): fresh herbs, hot sauce, Everything Bagel Whole Food Topper   

Preparation
  1. Dice carrot, pepper, and broccoli.   
  2. In a 500-ml mason jar®, layer in diced veggies, tofu, then rice noodles (you will need to fold them to fit them in the jar). Sprinkle in broth mix and soy sauce.  
  3. Secure lid; store in the fridge until ready to eat.   
  4. Pour boiling water into mason jar (it should cover the ingredients). Secure lid. Using oven mitts, carefully shake the mason jar®. Let sit 7 min, or until noodles are cooked.   
  5. Add toppings, if desired.
