Epicure’s take on a comforting Latin dish that’s made with beef and potatoes, stewed in a tomato sauce. It’s a meat & potato dish that’s got more flair than the usual weeknight dinner.  


Ingredients

Toppings (optional): cilantro, lime, tortillas

Preparation
  1. Combine seasoning and water. Set aside.
  2. Chop carrots and potatoes into small pieces. Place in Multipurpose Steamer. Cover and microwave on high for 10 min.
  3. Heat oil in Sauté Pan over medium-high heat. Brown beef, about 5–7 min. Add reserved seasoning mixture and tomato sauce; stir to combine. Bring to a boil and simmer.
  4. Stir steamed potatoes and carrots into pan. Simmer 2 min, or until sauce is thickened. Stir in frozen peas.
  5. Add toppings and serve with tortilla, if desired.
Tips

Like things a little spicier? Try adding 1 tbsp Buffalo or Louisiana Seasoning while your picadillo simmers.
